Before I start this blog I have got to say, I think this is the best bread I have ever made! The red onions mixed with the salt on top of the focaccia are brilliant - when I make it again the only thing I may add is a little bit of cheese!
The theory behind making this focaccia was as an accompaniment to my parsnip leek and garlic soup (coming in the next blog post) - I wanted an extra tasty side to go with my healthy dinner and the focaccia idea popped into my head.
It also with bakes like this that I wish I was a better photographer - I am learning slowly but the photos don't do this justice!
Ingredients (This makes one focaccia.):
250g strong white flour
7g yeast
Pinch of salt
200ml cold water
1 tbsp olive oil for the bread
Olive oil for drizzling
1 red onion
Sea salt flakes for sprinkling.
Method:
Put the flour, yeast, salt, olive oil and most of the water into a bowl (I used my KitchenAid for this), mix well and knead for around 5 minutes. Add the rest of the water if the dough looks a bit dry as you knead. I continued to knead (in the KitchenAid) for about 10 minutes in total - if you are doing this by hand it may take a little loner, but you want the dough to look smooth and shiny.
Leave to rise for about an hour, until doubled in size. When it is ready tip out of the bowl and knock the air out.
Line a baking tray (I advise using a non-stick sheet, as I used baking parchment and the bread got very stuck to it). Squash the dough out so it covers the baking tray into the corners, then leave for another half hour to rise again.
Preheat the oven to 200C/ 180C fan assisted.
Whilst the dough is rising, you can caramalise your onions. Chop them in whatever style you like then add to a frying pan with some oil over a low heat for about 10 minutes. When starting to go soft take off of the heat ready to put on the risen focaccia.
After the 30 minutes, spread the prepared onions over the bread and drizzle over some extra olive and and sprinkle the salt flakes.
Place in the oven to bake for approximately 25 minutes. When baked, remove from the oven and serve warm.

Looking delicious as always! Is it quite easy? I'd make it with olives ;)
ReplyDeleteI'm sure you would love it with olives :P. It is really easy - just knead everything together for the dough and put your toppings on at the end before putting in to bake :)
