Red Onion Focaccia

Before I start this blog I have got to say, I think this is the best bread I have ever made! The red onions mixed with the salt on top of the focaccia are brilliant - when I make it again the only thing I may add is a little bit of cheese!

The theory behind making this focaccia was as an accompaniment to my parsnip leek and garlic soup (coming in the next blog post) - I wanted an extra tasty side to go with my healthy dinner and the focaccia idea popped into my head.  

It also with bakes like this that I wish I was a better photographer - I am learning slowly but the photos don't do this justice!





Ingredients (This makes one focaccia.):

250g strong white flour 
7g yeast
Pinch of salt
200ml cold water
1 tbsp olive oil for the bread
Olive oil for drizzling
1 red onion
Sea salt flakes for sprinkling.

Method:

Put the flour, yeast, salt, olive oil and most of the water into a bowl (I used my KitchenAid for this), mix well and knead for around 5 minutes. Add the rest of the water if the dough looks a bit dry as you knead. I continued to knead (in the KitchenAid) for about 10 minutes in total - if you are doing this by hand it may take a little loner, but you want the dough to look smooth and shiny.

Leave to rise for about an hour, until doubled in size. When it is ready tip out of the bowl and knock the air out.

Line a baking tray (I advise using a non-stick sheet, as I used baking parchment and the bread got very stuck to it). Squash the dough out so it covers the baking tray into the corners, then leave for another half hour to rise again.

Preheat the oven to 200C/ 180C fan assisted.

Whilst the dough is rising, you can caramalise your onions. Chop them in whatever style you like then add to a frying pan with some oil over a low heat for about 10 minutes. When starting to go soft take off of the heat ready to put on the risen focaccia.




After the 30 minutes, spread the prepared onions over the bread and drizzle over some extra olive and and sprinkle the salt flakes.




Place in the oven to bake for approximately 25 minutes. When baked, remove from the oven and serve warm.

    1. I'm sure you would love it with olives :P. It is really easy - just knead everything together for the dough and put your toppings on at the end before putting in to bake :)

Classic Victoria Sponge

Hello friends, As we are in Wimbledon week, what better cake to celebrate with than the classic Victoria Sponge, with a cream and strawberries filling. This is a beautiful looking cake and an ideal desert to the countless BBQs and outdoor meals as we celebrate the coming of summer. Nutella cookies!

Hello friends, So..... Nutella. Anyone else obsessed with this? I love the chocolate-hazelnut yumminess and will spread it over pancakes, toast, muffins, crumpets, anything really that seems like a good combo. So it struck me the other day, that I haven't made the most appealing bake - Nutella cookies! This recipe only has three ingredients, it is so simple and makes gooey cookies that won't stick around for long!  Ingredients : 130g plain flour 260g Nutella 1 egg Extra Nutella for the gooey center Method: Preheat the oven to 180C/ 160C fan assisted. Mix together the three cookie ingredients and beat well until the dough is consistent. It will be quite a greasy dough and will stick together well. Take a spoonful of mixture and roll into a ball, flatten slightly and make a little well in the middle.
