A year off of blogging!

Hello lovely readers,

So I have been somewhat slack on the blogging front for over a year now, looking back my last post was the epic Malteaser Christmas cake from 2015. Lets just say that life got a little busy in 2016, and I am sure 2017 is going to be equally as manic, but in the past week or so the urge to write has come on strong.

So what did I get up to in my year off? Well, mostly I spent 2016 'adulting' and doing a few of the big exciting life things - firstly we got a puppy! Beautiful Molly, a standard long haired Daschund is now 13 months old, reasonably well trained (unless she is in one of her more stubborn moods) and my little angel. That happened in March 2016, which was also the month we put an offer in on our first home. Fast forward 7 weeks and all the paper work had been signed, money exchanged and keys in our hands. Big life moment. I now have a beautiful new home with a great kitchen for baking and lots of lovely neighbours who I can tempt with cake. Baking had taken a bit of a back seat for the remainder of the year however, as life update number three is that in July I found out we were expecting our first baby. In May we decided the time was right, and shockingly in our first month of 'trying' it happened! This was a fair surprise, but a joyful one at that. Pregnancy has been tough, I have had pretty much every symptom in the book and now I sit at 32 weeks just wanting to meet the little one.

I have decided that whilst I love baking, I am going to use this blog as a bit of a life story to look back on in years to come and hopefully celebrate my successes and laugh at the challenges I know are heading my way. I am sure baking will still heavily feature, although more baby friendly recipes with less sugar may be on the menu.

Lets see what life has to offer in 2017 (17 is my lucky number so hoping it will be a great one!) Xx

BBC Good Food Caramel Brownies

Another get together with friends has prompted some more baking (whilst the baby is sleeping) and the salted caramel cover recipe from a BBC Good Food issue from a while back caught my eye. I have been storing this recipe waiting for a good excuse to bake it, and I can say (after scoffing a few), these brownies do not disappoint and will be made again. Brownies are very easy to make, the one stumbling point I often find is the temperature of the oven and the time they are baked for - as ovens vary vastly this is quite hard to write into a recipe, but I have a fan assisted fairly new over which bakes quite hot. They key for baking the brownies is checking after the stated time, and they should still be a little liquid in the middle if you want moist squishy squares. Malteser Christmas Pudding Cake

Hello! Doing the rounds at this festive time is a Malteser Cake in the style of a Christmas pudding, and one of my friends has challenged me to make this, so being one to thrive at the thought of a challenge I gave it a go! I basically have made a chocolate cake in a Christmas pudding bowl, sliced and iced then covered in Maltesers. Pretty simple but looks fairly impressive.  This recipe will make you the Christmas pudding and some spare batter, so you can pop in 12 cupcakes as well! Ingredients: 350g plain flour 350g caster sugar 50g cocoa powder 1 tsp bicarb of soda 150g dark chocolate chips 435ml vegetable oil 1 cup of buttermilk (sour cream can be used as an alternative) 3 large eggs For the icing: 350g icing powder 250g softened butter Cocoa powder to flavour Two large share packs of Maltesers Melted white chocolate A couple of cherries Method: Preheat your oven to 170C. Nutella cookies!

Hello friends, So..... Nutella. Anyone else obsessed with this? I love the chocolate-hazelnut yumminess and will spread it over pancakes, toast, muffins, crumpets, anything really that seems like a good combo. So it struck me the other day, that I haven't made the most appealing bake - Nutella cookies! This recipe only has three ingredients, it is so simple and makes gooey cookies that won't stick around for long!  Ingredients : 130g plain flour 260g Nutella 1 egg Extra Nutella for the gooey center Method: Preheat the oven to 180C/ 160C fan assisted. Mix together the three cookie ingredients and beat well until the dough is consistent. It will be quite a greasy dough and will stick together well. Take a spoonful of mixture and roll into a ball, flatten slightly and make a little well in the middle.
